This wine is made in collaboration with a family estate for 4 generations located at the gates of Béziers, facing the Mediterranean Sea. For more than 30 years, François Pugibet and son Vincent have been recognized for the quality of their wines and their innovations (notably in the process of making low and/or alcohol-free wines). Today, Vincent is focusing on the development of new resistant grape varieties that allow for pesticide-free viticulture.

Presentation

Craving a summer sip that's light on the alcohol but heavy on flavor, without fully hopping on the 'dry' wagon? Vincent & François are shaking things up! Partly as rebels against modern trends and partly as a hat-tip to tradition, they're dialing back to winemaking's roots. Their mission? To serve up easy-going, well-balanced wines that are low-key on alcohol or boldly booze-free. It's oldschool cool with a modern twist!

Vinification

In the winery, the fruit undergoes gentle handling and cool-temperature fermentation to bring out its vivid aromatics and lively fruit essence, while preserving its body, texture, and depth. After creating the base wine, it undergoes a cutting-edge dealcoholization process. Here, the winery uses exclusive technology to carefully extract alcohol molecules from the base wine. This prepares it for transformation into sparkling wine. Next, it's moved to Charmat tanks, where sensors monitor the pressure build-up. When the desired pressure is achieved, the wine is cooled to stabilize and allowed to settle before undergoing isobaric bottling.
