100% destemmed.Hand harvesting with parcel sortingCold start fermentation to favor the soft diffusion of tannins and aromatic conmpounds without extraction iof vegetal aromas.The grapes are co fermented in tanks and, after malo-lactic fermentation, aged in tronconniques wooden vats .
