The Terra Ventoux winery was born in 2003 from the merger of two cooperatives dating back to 1929.The cooperative is characterized by the diversity of the vineyards it is getting the wines from, having great wealth of terroirs. Since 2005, Terra Ventoux has started an important work of parcel selection and in 2017, Terra Ventoux became the first cooperative in France to produce biodynamic wines.
The story
Vinification
The "Evidence blanc" cuvée expresses the aromas and finesse of the Roussanne and Grenache blanc grape varieties. Fermentation on indigenous yeast at low temperature maintains the full fruity and floral potential of this wine. After alcoholic fermentation, this white wine is aged in 225l barrels and 500l half-muid barrels for almost a year. This ageing process brings aromatic complexity without revealing a woody character and stabilizes the wine naturally.
