The Terra Ventoux winery was born in 2003 from the merger of two cooperatives dating back to 1929.The cooperative is characterized by the diversity of the vineyards it is getting the wines from, having great wealth of terroirs. Since 2005, Terra Ventoux has started an important work of parcel selection and in 2017, Terra Ventoux became the first cooperative in France to produce biodynamic wines.
The story
Vinification
Special attention paid to the plot, including debudding and removal of leaves. Strict specifications. Harvests are done when grapes are very ripe, to get a fruity aroma and an harmonious tannic structure. Grenache, vatting of 25 days at 26/28°C. We worked on getting the best colour, substance and tannic extraction, searching for the softest structure. Syrah, vatting of 21 days at 24°C. Respect of the quality of the grapes, monitoring of the temperature to preserve the aromatic potential and to smooth out the tannins.
